I didn't update this thread, but it turns out there was an issue with my engine where the camshaft was coming into contact with a valve and causing wear. This is the root of the noise that I was hearing.

Luckily a local engine shop was experienced with this issue with another Defender (not sure how common this is), and they were able to sort the issue with the rocker assembly and replace the camshaft. It runs a lot better now, but I wouldn't say it was perfect.

They shared an overview of the issue on their instagram: https://www.instagram.com/reel/C94r5HGt9kW...BiNWFlZA==

^^ Looks like one cam has slipped on the camshaft (the most damaged cam and the adjacent one are clearly not aligned).

What fool thought that press-fitting the cams on the camshaft was a good idea? What was wrong with solid ground camshafts?

Ok, 35 years as a mechanic and 5 years in a busy retirement (2 Lotuses, 2 Land Rovers and innumerable bicycles, scooters and motorbikes) and THAT is a new one on me, cool.
