Any traditional British sausage with a good balance of shoulder, seasoning (sage a must) and rusk. Also prefer a thicker sausage and cannot stand a sausage that shrinks to half its size due to the amount of water. All accompanied by English mustard, if in a sarnie, or HP if a bloody good fry-up with ALL the trimmings.
I know you lucky folk have access to Great British Butchers, and as I don't and am reliant on gifts from friends dashing to supermarkets, may I highly recommend Porky Whites as an excellent, supermarket bought day-to-day sausage.
Finally, thumbs up to the aforementioned Bratwurst, I do also love a Toulouse, and of course Chorizo is delicious. But if I can add one to the list, especially on a BBQ or in a baguette with fries piled on top, the North Africa 'Merguez'. Mix of mutton and goat or beef, bags of North African spices, fantastic. But make sure you buy freshly made, rather than mass produced which often have too much fat, and also watch the explosions, they fire out piping hot, paprika stained fat, great for staining your clothes....
