There is no spare space with the 7 seat option.

Remember that Defender is much a 5+2 car than a 7 seat, Discovery 4 and Discovery 5 are very 7 seat...
If you look close o jump in a new defender with 7 (5+2) you could see that there is not much space avaliabile.... In my old Discovery 4 with 7 there was much space than the new Defender.... DISCOVERY 4 2013 VOLVO XC90 2017 MY23.5 110 D250 SE in Santorini Black |

The cool thing about the 7 seat version though, is that the second row of seats can slide forwards and backwards so you can make the boot bigger when you need it or have more 2nd-row legroom. |

No space. Here’s a photo of what is under the floor. Just the jack, tow hook etc..
As the previous poster mentioned you can slide the 2nd row forward. It’s around 15cm/6inches which creates a decent amount of extra space. Photo attached too.
