265/65R18 is dimensionally the same as the factory fitted 265/75R16 tyres in terms of section width and overall diameter, so it'll be fine. The standard 16x7 alloys are something like ET32 so ET10 is a fairly minimal change.
I've never run 18" anything on a Defender and never would but having fiddled around with a few combinations over the years I'd be astonished if you need a lift and I wouldn't have thought the tyres would rub anywhere either. Many thanks for that, I hadn't planned 18 either but it seem that like everything there are ar stock issues and the wheels I found looked great so we wen't for it. Tyres ordered so we'll see how they look come Monday evening - photos to follow.
