1989 110 Standard Temperature Gauge Under Reading
This is the original gauge. The sensor may be new. 19J Turbo Diesel Motor.

When using the car reasonably hard, the temperature gauge barely comes off the stop onto the left side of the white arc on the gauge.

Any ideas before I break out the IR temperature sensor?

I would expect the gauge to sit somewhere around mid-range on a warm day.

What have other 19J or 200/300Tdi owners found? 2003 Defender 90 TD5 SW

Temperature sensor / gauge on a 200tdi is different from the 19J and using the wrong sensor causes the issue that you mention.

But also check that your thermostat is not stuck open. If replacing thermostat, temperature should be 82dC. That should bring your temperature gauge just under the middle. 1988 90 Hard Top, 19J Diesel Turbo, Shire Blue - Restoration ongoing

As above it should sit around the middle.

There are various posts about 19j to 200tdi conversions where sensors used are detailed, you should be able to find something helpful searching those. Cheers
