200TDI Thermostat top cover bolts.
After a bit of a struggle I got all three bolts out, well, the head broke off one but managed to wind the remnants out with a set of grips. Is it a wise idea to use stainless bolts or should I just use standard ones with plenty of anti seize paste on them?

Don’t use stainless, it’ll be even worse for bi-metal corrosion. New good quality bolts - not cheap ones off eBay - and a bit of anti-seize paste as you suggest is the best option.
