Just guessing here, but when you actuate the brakes with the engine off you release the residual vacuum from the servo. Could it be the springs in the servo rebounding when you release the pedal?

Yep anything involving brakes and abnormal behavoir is worth worrying about...
Can you have a closer listen, get someone to press the pedal while you go round all four corners try and find out exactly where it's coming from? |

Sounds (and feels) like a spring, seems to be coming close to the pedal itself, possibly from the servo, but not sure...
