Given that you can't transfer tax anymore, then theses days everybody sells cars without it. Given that the 'system' doesn't know it until you submit the log book to DVLA, I wouldn't worry about it.
Of more concern would be the new owner tripping a speeding camera (or worse), so a signed, timed and dated receipt has always been a good idea. You can do the whole process online while he's there on the DVLA web site. The new keeper can also tax the vehicle that way before driving it. http://www.yorkshireoffroadclub.net/

If I was the buyer I would be keen to do it then and there. Otherwise they are relying on your goodwill not to do the claim while they are driving home.
Don't forget the full month rule on paying for or claiming back the tax. So this week makes £20 to £45 worth of difference on selling on Friday or Saturday. 1995 Defender 110 CSW 1971 SIIA Lightweight |

I buy and sell a fair few cars for friends & family and I always write out a basic receipt when the car is sold. Include the vehicle details, buyer & seller details, addresses etc, date and time of sale. And get your buyer to sign and date it and do the same yourself. I then keep one copy myself and give the other to the buyer. This gives you a clear mark in the sand as to when ownership and therefore responsibility for the vehicle is transferred.
For buying I tend to complete the transaction and take ownership. Then before I drive off I go online on my phone and tax the car so all clean and legal. But as previously mentioned, theoretically if the car is taxed already in sellers name then unless they cancel the tax separately, it will still be valid until the paperwork is filed at DvLA when they receive the V5. ^^ Which use to happen anyway if the vendor kept the tax disc for a refund.

As Davew says you can do it all online. My wife has just sold her car to a private buyer. After handing over the cash he insured it and taxed it online whilst my wife made him a cup of tea. It's so easy it's not worth taking a risk. Defender 90XS SW
