Think both silverside and topside from supermarkets are cheap cuts and need low and slow cooking to avoid being like leather. I would suggest sticking it in the slow cooker on low for about 7 hours and seeing what it is like. No liquid in there, just the beef.

Go to a good butcher and never buy meat from a supermarket. He'll also tell you how to cook it to perfection.

for those joints from the butchers i use bottom over/slow cooker approach after sealing first. Cheers

I have success by cooking in a casserole with the lid on with the joint sat in about 1 cm of water, cook like this, lots of recipes like this, look up pot roast the beef will melt in your mouth

For topside you should let it rest for longer than 10 minutes.

I let mine rest on a chopping board uncovered.
When you remove the joint from the oven the core temperature continues to rise for quite a long time so the long resting time allows the internal temperature to stabilise and then lets the fibres relax. For me a quality joint of Topside at room temp, & a red hot oven to start I try & use our local butcher for Beef but he can get a bit expensive! If it has to be a supermarket in my opinion Morrison's is the best for Beef & Lamb, as far as I am aware they are the only Supermarket that sources Beef & Lamb direct from the farm (they even have there own fleet of live stock trucks to transport to there own abattoir's) http://www.morrisons-farming.com/ |

Thanks for the reminder!
Started off with 2.5kg of beef. Chopped in half ish (1.3 KG into casserole dish for the over on a 150c middle of oven for 3 and a bit hours and then some resting time). Beef & ale stock flavour thingy and some boiling water for the stock with some red wine, Marinated over night in Garlic and some marinade from Sainsbury's Added some chopped celery herbs into the pot and cooked away. Other chunk of meat (1.2kg)in the slow cooker with a stock pot and a bit more red wine, chopped celery, carrots and herbs. High for 4hrs and then low for 2hrs ( I think it was) Took both out and left to relax while the spuds and Yorkshire puds went on. Carving the oven cooked meat was easier and it stayed together. Carving the slow cooker cooked meat this ended up like pulled Pork To me oven meat was dry and slow cooked meat a bit better. From what you say I reckon that is not bad at all
The one thing I will never do at Christmas is roast beef, there are two many variables even with a trusted local butcher nearby to supply the meat. Well done !
