I think your original thought on a Fabia VRS is a good one
Also think an Octavia is a great car and the diesels seem pretty bullet proof - that's probably why so many taxi's around here are Octavia's
I am a huge VW fan but wonder whether with your budget you'd be better going for a slightly younger / lower mileage Skoda rather than paying the VW premium.

I have a Lupo Sport, which was a friends engineering degree project, with a 'built' 1400 engine, lowered on German suspension and steel wheels, it's genuinely more fun to drive around the lanes than my 911 was.
Though it's too low geared for long runs (my friend got a job at a Motorsport transmission place, so put low gears in it), it's definitely a blast on country lanes and traffic light drag racing.
It could well be up for sale soon as the v8 90 will take its place (a nice economical motor! It's all about smiles per gallon, not miles. ).
Going back to the topic, I do like a tuned diesel Fabia
