Whilst your idea of buying tyres that you can properly wear out during their theoretical life before exposure kills them makes sense on paper, in the real world you may have a problem.
The performance of a tyre isn't constant right up to the point that it's worn down to the wear bars. It will drop off significantly long before then. For your particular use, an AT with 7mm of tread, whilst potentially still having lots of life in it as a road tyre, will perform a lot less well on grass than one with 12 or 13mm. I can't tell you how quickly any given tyre might become worn to the point of being ineffective - your mileage and over all useage will determine that - but it's worth bearing in mind before just diving in for a cheap option in the hope that you can wear it out over five years or so. I know what you mean about the performance dropping off and honestly I would change my tyres way more often but I am constrained by it being the farm car and therefore not wholly mine to treat as I would. Consequently tyres have to be worn out before they are changed which has led to some pretty knackered tyres being kept on various cars well after they should have been discarded. It's just one of many issues to come from working with family. Rhubarb and custard let fly with their secret weapon.
