You do it on your phone itself.
Go to Settings, General, CarPlay. Select the Pivi for your vehicle then click Customize.
You can then reorder the apps or delete or add as you wish

Remember that the New Defender is a 5+2 seats not 7 seats.
In the Discovery 4, that was a very 7 seats the space for the last 2 was..."decent"... |

Also for me is a great engine, very smooth
only issue the Hose rubbing on air filter canister.
