Hello and welcome to the forum
Start with the easy one. The cable with 7 wires is likely to be the trailer wiring harness that someone has put crimp bullet connectors on. The extra cables you have are for a left hand drive Defender. LR just added the the extra wires to save on having a left and right hand wiring loom. The good news is that if you ever want to add extra reverse lights you can just use these connectors. |

I thought i was going mad with all these spare connectors but that makes prefect sense. Just the wiring to go, cant be that bad / hard |

The other wires are probably for heated rear glass and rear wiper. The bunch of 7 is as geobloke has said, for towing electrics.
