Below a picture taken from the Defender 2.2 commercial brochure which gives you some facts on your engine.
Now, looking at the power/torque graph, it seems a bit of a nonsense to shift gears at 2000rpm, as it is way to early in the power/torque curve. Your engine should run happily anywhere between 1800rpm to 3000rpm so you should use the full range. I personally even go up to 3500rpm when pushing it a bit before changing gear, so when I let the clutch out in the next gear the rpms land aprox 2000 rpm and I am at the start of the torque curve again ready for new acceleration. (I have a 2.4, but it's basically the same power/torque as the 2.2)

To check the parking brake : raise one rear wheel clear of the ground (with jack and secure on axle stand), release parking brake and check that you can rotate the lifted wheel with your hands and there is no friction/resistance from the handbrake drum (located at the back of the transfer box, before the rear propshaft).

As above. Newer diesels need higher rpm.
High rpm is actually not a bad thing to an engine... lower rpm is worse as there is less oil pressure, and you can squeeze the oil out of the journals. 1988 90 Hard Top, 19J Diesel Turbo, Shire Blue - Restoration ongoing

Am i missing something here? Looking at those curves isn't peak torque developed at slightly less than 2000rpm and max power at around 2700 rpm? Wouldn't that mean an ideal shift point of 2500 rpm? 2011 130 Utility Body

Power = Torque x rpm.
max power is at 3500rpm as per the table in my previous post.

shifting up at 2500rpm, you will lend too low down on torque in the next gear, somewhere below 1500rpm so in an area where the engine has little torque hence acceleration in the next gear will be laborious.
Although if you are not planning to accelerate further and just cruise instead, then yes, it may make sense, particularly between 5th and 6th which have ratios not so far from each other and in which case you may land just below 2000rpm so in a much more confortable and effortless zone for the engine.

My short experience with Defender 2.2 shows that using 6th gear below 2000rpm, although driving is quite smooth and relatively quiet, it is causing visible increase of coolant temperature. This engine doesn't like to go below 2000rpm.
I would say - described 'symptoms' of driving after changing the gearbox are quite normal i know from my own car. Maybe previous gearbox was not the original one? I wish to change gears at 2000. Especially during daily city driving. 50km/h requires to keep 3rd gear. Typically pushing up to 3000rpm to change the gear up, higher only in special cases, as it become very loud.
