I zig-zagged all the way through Turkey a few yrs ago with the wife and my 2 young girls . Entered from Greece and into ISTANBUL and exit into Georgia at the border of Sarpi . Carry a few quarter bottles of whiskey , ( they will get you brownie points with over zealous cops ) and good to barter with for local goods . Buy your cheep floor rugs . Stay at the APPLE Palace Hotel in Amasya it's right at the top of a high mountain and massive views .Samsun is on the Black Sea and if going make sure you take the mountain road there it's high and amazing . Always have a Jerry can full as I ran out of fuel with no stations available . I will add our travel pics soon with more info .

I never made it to Cappadocia when I lived in Turkey, however, as you know, its well known as an awesome place. To mention the obvious, its a couple of days drive each way once you cross the border into Turkey and with a few days in Cappadocia you will need to make good progress through Europe if you only have 3 weeks in total. What a trip though, I really hope you decide to go for it because I would love to read your trip report.
