I was wondering if it's worth getting a wiring kit (like the Mobilecentre guys offer) or do what I usually do and make it myself.

Plus I need the two batteries (Odyssey PC1500..?) and a battery tray, plus any other bits I've missed.

What do you recommend..?

I'm doing this to give me power while I'm camping and offering redundancy in case I flatten one of the batteries. I winch occasionally, but my current Bosch S5 battery copes well enough, so I assume linking two Odyssey batteries will give same or better performance.
