Making better use of passenger seat space - for touring/camp

Hey all,
Travelling in Europe this summer.
Me and my two girls: 4 and 6.
Going with roof top tent, plus bikes and 'toys'
I am going to take passenger seat out, so they can sit on the second row and look straight out, and feel like we are all together.

I used to be in the VeeDub camper scene. There were several front seat mods I saw back then.
Flip out cooker, reversible seat, fold down table etc.

But not seeing anything much for my defender.

Anyone done or seen any good use of space for this area?

(Puma 110 - XS - 2013, for reference)
