The reason not to get a light interior in the Defender is to mask the poor quality of the leather and leatherette.
Your Photo Highlights the poor choice they have made (on purpose). You can see 6 different finish of leather/Plastic, of which only the perforated part is leather, there rest is Plastic. At least on the black seats is not this noticeable.
Hard to see it from new, i bet in 3/4 Years it will be more noticeable after wear and tear.
Leather on the FFR is on another level and the letherette is really only seen where parts of the body don't touch it. Choice of materials on the RR is really much better.

I will shamelessly use this opportunity to post a photo of my Defender's interior.

One of the reasons why I went factory spec was to not get an all black car as it seems people over here just recognise black wheels, black paint and black interior, so getting something out with that spec on a used market was quite a challenge.

Looks good, my next one will be light cloud. As you say nobody has much imagination when it comes to Land Rovers, regardless of model they’re all blacked out. 24MY 90 D250 HSE, Tasman Blue

I have a base model, cloth seats and light headlining. Looks great and none of this leather nonsense.

It was less brand new than the OP’s budget, but times have changed sadly.

The Auto trader search for a Defender 110 from 2020 onwards returns this colour distribution:

Using rough calculations, basically every 6 out of 10 Defenders 110 are either black or grey, which is why I was struggling with finding an interesting used car.

Silver and green next, combined 25 cars out of a 100 available.

Blue only 6 out of 100 cars on the market.

A bit pointless analysing, but it echoes my sentiment that I only saw dark cars with black wheels and black interior.

Second point would be my observation on the leather in the HSE, I may be wrong, but the entire seat feels and looks like it has been assembled from the same leather, so it's either all plastic or is not. In comparison the leather doesn't feel as soft as the Nappa I had in the e class, but it feels way better than the standard plastic cow in the Merc GLE or BMW X5.

Them were the days, and air suspension was standard on 110. 24MY 90 D250 HSE, Tasman Blue

Some of the blame for the monochromatic colour of cars lies with the dealers who very rarely order in anything other than black or occasionally grey for stock.

So if you don't want to wait 6 months for a factory order, that is what you get.
