It is a well know issue that the wires from the TPS to the ECU rub through and cause the symptoms you mention and is cured by running a new loom from underseat ECU to TPS, using trailer multicore cable.

I'd second this. I had very similar random issues which have all been solved by re-doing the wiring from ECU to pedal.
