Thanks, yes I’d seen those which made me think this was the way to go. I’ve put a socket set in to remove them when the kayaks are removed, because I just know I’ll forget about them! I’m also going to go over the welds again because I ran out of gas

I would not trust the hand grips on the boat like that as they can give way, rather feed the straps over the whole boat and use the grips as a guide to holding the strap in place.
Vertical bars are very simple to make and dont need to be very strong, only to hold the boat on its side, with the main strap across the boat to hold in in place. easiest way is upside down with passenger holding the seat through the sunroof. Until you go downhill and a million gallons of water pour out and soak the car interior. Don't ask me how I know this...
