Welcome on board.
The grill will fit straight on, although you might need to provide the fixings. The bumper is personal preference, really. What you've got certainly looks purposeful but if you fancy the stock look then, why not? It's only a handful of bolts to swap. The aircon is interesting as I don't think we had that option over here. It only really became a standard fitment with the introduction of the TD5 engine and the installation looks very different, including the extended 'nose' to accommodate the fan behind the grill. One of your pictures doesn't seem to have worked properly, unfortunately, but I'd be interested to see a wider shot of the interior to see how it's laid out. If yours doesn't work, why do you think it's been unplugged? The only way to be sure is to do some testing, I'm afraid. Start with the fuse(s) and then check earth and power connections and see where that takes you. Let us know how you get on. Thanks for the welcome! Indeed, I think what I have is the stock air-con installed. It doesn't have the large protrusion I've seen on some air-con defenders (not that Defenders need air-con!).
If you see in the photos, the grill surround sits pretty flush with the headlight surrounds. See the other photo of another NZ Defender (the orange one), that black grill looks nice, and sits flush. I'll check the fuses, as my entire fan/blower system doesn't seem to be working, even for the heat. Would love to take this Defender back to looking new again. Lot's to do. Fortunately/unfortunately it's pretty much had no upgrades/updates since new. So, a blank canvas for me!
