Do I assume the 'stitching' is in place and you do the zig zag thread down the middle?

Yes, its like lacing up really. I did watch the you-tube videos several times.

The leather is made to measure and the stitched; and then you make one stitch to start with and just loop from one side to the other using the existing stitches and then finish each section with a final stitch and not to keep it in place.
