I have the mud tray. You can still sit someone on the middle seat. Only thing I would say is that the openings are too big for cups or cans they can tip over. You would need to fit some foam insets if you want drinks to remain stable.

I have a roll of gaffer tape sat on my middle seat, holds a can/coffee perfectly.
When there's someone sat in the middle seat, they hold cans/coffees perfectly too. |

Gaffer tape solution sounds good, I'm sure there used to be a round holder the diameter of a coke car and about an inch high you can stick on the dashboard

You can get these folding things to screw into the dash? I just put them into my cubby and fold them away when I am not carrying a drink. As you can see in the second pic they fold very neatly when not in use.
