Defender Send off 5th Gear Style
Now my question is what do I need to do to my 2.2 to get the exhaust note and power and keeping it road/MOT legal like the defender
Bowler?

I notice the Defender wasn't the full motorsport spec, it didn't have the Bowler gearshift. That might have explained V B-H's wrong gear selection.

Also, what was the plastic thingie coming out the top of the o/s/f wing, I'm guessing it's some kind of air intake but what do you guys say....

It looks like a snow cowl or low level snorkel but there isn't anything listed on their website although the picture for the bumper quite clearly shows one

The wing air intake is not in mass production yet due to the moulding costs it needs. It may be at some point.
