Just remember that ABS & ETC are electronic, and as such, can be disabled. Disabling them will in no way affect the useability of the vehicle. If and when they go wrong, just disable them!
How to disable them varies in method, from removing appropriate fuse to cutting appropriate cables. On my motorbike (which does not have fuses), I can disable ABS & traction control by unplugging it or removing the speed sensor rings.
Whilst i know nothing about the electrics on the new Defenders, I cant imagine its hard to disable this lot.
Therefore I'd be inclined to spec a vehicle with ABS & traction control.
