I think that the rolls are 1520mm wide. I would put a join along the seam in the roof

Is the wrap done on an ink jet printer? I'm thinking it might be and if it is then the width of the wrap can be bloody huge. At IPEX, last time I was there (International Printing Exhibition), they had super wide format printers that were many meters across, easily enough to wrap a Defender all the way around with no joins. If your wrap agent is saying they need to make a join then they're not using a wide format printer to create the image in which you should either raise that with them or try someone else.
A very quick search on You Tube found this, you can see it's easily wide enough to cover a roof and I've seen ink jet printers about twice this width: |

Am i right in thinking that removal of the applied wrap further down the line would result in damage to the lacquer coat of the original paintwork? '57 Defender 110 XS Station Wagon 2.4tdci

^^Nope, no damage at all if done properly (applied and removed properly). That's the whole point of a wrap, if it damaged the paint resulting in a respray being needed, you may as well have one in the first place!
