Leg room vs headroom
Anyone modified their bulkhead removal bar to enable the standard seat runners to be mounted further back to give more legroom without compromising headroom?

I've got the mud bulkhead removal bar, and mud rails and headroom is definitely not a problem! An engine to TDi for!

I'm 6 foot 1 inch & have loads of head room.

However, can the OE bar be moved back safely? It would save buying rails & also having to consider a smaller steering wheel if the wheel to lap gap becomes too small using additional rails. Land Rover Defenders. 67 years heritage, minimal appearance changes, still going strong all over the world. Perhaps I should have titled this "legroom vs stoop to see out of side windows" didn't quite have the same ring to it though.

I would just like a bit more seat travel without having to sit higher up.

I think that you will just have to accept, to a certain extent, the dynamic (?) limitations of the Defender design.
It's more a case of you being willing to adapt to fit it, rather than the other way round.
I'm 6'4" tall & could not drive my Puma without Mud rails, as the 'new' dash layout has severely reduced what was already quite restricted leg room.
I find a more upright, 'truck-like' driving position to be most comfortable, so do not use anywhere near the full extent of the travel made available by the Mud rails.
The trade-off with Mud rails fitted is that you do sit 32mm taller in the saddle.
However, be under no illusions that anyone over 6' tall is probably having to stoop to look out of the side windows in a
Puma - With or without Mud rails fitted!
I know that there is a tendency to look upon Defenders as being a big Meccano kit, but I would resist the temptation to DIY adapt your seat rails, unless you have proper engineering experience, as you might find out the hard way that your work was not up to scratch.
Remember, there are better models in the Land Rover range if driver comfort is your prime concern. Wink '57 Defender 110 XS Station Wagon 2.4tdci

Its more looking through the screen wiper arc when its raining .... Whistle

Defender wipers could be a little longer, every square centimeter helps. Whistle Land Rover Defenders. 67 years heritage, minimal appearance changes, still going strong all over the world. Not a fashion vehicle, but fashionable to own. Made for the needy, not the greedy. Ta ta Defender
