Had exactly the same problem with a 1990 V8 carb fed Discovery, it was venting after any length of journey.
It actually went back to LR to investigate and fix. All I can remember is that it can back with longer vent pipes Not a lot of help really. If its got SUs it is most likely that the float needles or seats need replacing as they have worn, Ive done this on HS and HIF carbs and its not hard but never on a Rover V8 but expect its a simular arrangement. Would expect a good manual to cover how. Another thing to check is the fuel pump if an aftermarket high pressure one is fitted it can overcome the floats and you will need a regulator
