You would be advised to pop a code reader onto your engine management system to see what fault codes pop up and then take any action that is advised from there. It may be that the tank breather is an issue or that something coincidental has occurred while you were on your trip. Left my fuel cap off recently, no warning light during a 30 mile journey. It started with a kiss, never thought it would come to this.

The engine warning light will not reset itself. A code reader is a vital bit of your defender survival kit. 99% of the time it comes on there is nothing to worry about. The reader allows you to wipe the stored fault codes which switches off the light.

Fault codes appear for some reason. Find out their meanings and check if they reappear...
I believe the user manual wants you to stop the engine if the engine light appears ... |

I doubt the MIL being put on the dash has anything to do with refuelling. More that a new ignition cycle was completed. I.e. shut off, then restarted.
